Cooking Classes

  • On your own for the first time and never learned to cook?

    These classes are for you.

You now have the unique opportunity of having personalized classes taught in your home by a professional chef with a Master’s Degree in Holistic Nutrition. I have been a vegetarian for over 30 years and practice delicious whole foods cooking for good health.

I was a professional chef for five years and currently teach cooking classes at Portland Community College and am a volunteer chef for the Oregon Food Bank.

For these classes you choose from a variety of areas what you want to learn. Examples:

Classes can be adapted to suit your specific health or taste preferences.

Relax and let me cook for you.

Each class will include a basic introduction to whole foods and vegetarianism and suggestions on how to substitute and alter recipes to suit your particular tastes and desires.
Each class session will consist of a demonstration and preparation of your chosen foods, enjoying the prepared meals, and clean up. This personal setting will be more comfortable for you and your friends than classes in a school setting. Classes in your home will give you a better idea of how your own home can work for you as a cook. You will learn that you don’t need fancy equipment to prepare delicious wholesome meals. And you don’t have to do anything but enjoy yourself.

You and your guests will each get a recipe packet of all the demonstrated recipes with thorough instructions and suggestions for substitutions, where applicable.

Class Details

Each class is personalized so you can learn something you really want to learn.

The number of students is limited to the size of the student’s kitchen—with a minimum of 3. Because the classes are in your home, you enjoy a pleasant and relaxing atmosphere.

Personal Cooking Lessons: (these are intended for recipients of gift certificates)

One-on-one (or two), private cooking instructions in your kitchen. Class focus will be a particular category, selected by the student; a special dinner; or a food problem you are looking to solve. Use of the gift certificate includes personalized instruction and all foods used in the class. Since a huge part of these classes is aimed at getting you comfortable with cooking in your own kitchen, all demonstrated foods will be prepared with your equipment. There is no special equipment needed to prepare healthful foods. Class is 3 hours long on a day and time convenient for you.

Personal Cooking Class Party

For these classes participants pay $35 each—a minimum of three. I will demonstrate and serve food categories of your choice. Choose from: Beans and Grains; Spring Brunch; Summer Soups and Salads; Tofu and other Soy Products; Healthy Sweets, and more. Class includes the demonstration, enjoying the prepared foods, and clean up. The size of the class is limited by the size of the host's kitchen. Each class is 3 hours long on a date and time of your choosing.

Cook For One Day, Eat For The Week:

This class is designed to help busy people have all the healthy food they need for the week by preparing the week’s food all in one day. This will prevent frequent stops at unhealthful fast food joints, and save money. Categories of food choices are similar to the ones listed under Personal Cooking Class Party but will be tailored so they can be prepared in one day and refrigerated for use during the following week when you are too tired after work to cook. Class includes menu planning, recipe selection, shopping, and food safety.

Cost is $35 per person for three hours. The time and price of this class is negotiable.

Rent-A-Chef

How often do you feel rushed or pressed for time? Do you need help with a party or holiday gathering? I have a master’s degree in Holistic Nutrition, was a professional chef for five years, currently teach classes at PCC and am a volunteer chef instructor for the Oregon Food Bank. I will come to your home and help you prepare food for your party to relieve your stress. I can help with healthful menus as well as prepare foods according to your favorite recipes. And I can help you make your family recipes more healthy. I will also help with clean up.

Hourly rate is $25.

Nutrition Counseling

I have a master’s degree in Holistic Nutrition. My counseling emphasizes methods for staying healthy by eating whole, natural, vegetarian foods. Sessions will include the importance of lowering your intake of empty calories by choosing good foods and doing moderate exercise to burn more calories. Both methods are time-honored ways to get fit and stay fit—at any age.

If you are at your desirable weight but want to eat better, we’ll discuss how to include whole foods in your diet. We will also discuss exercise that is right for you.
You will learn how to write a Food Diary to discover exactly what you are currently eating, and get counseling to discover how to alter that pattern to capture and maintain good health.

Hourly rate is $50, negotiable

Food Writing/Editing

Need help with an article or need a special piece for your newsletter? I have a master’s degree in Holistic Nutrition and am a life-long practitioner and advocate of whole foods, vegetarian eating and cooking. My research skills are creative and constructive and will produce the results you want. Writing experience includes publication in a national health magazine, writer/editor of Audubon Newsletter, book reviewer, and I have edited a 240,000 word manuscript.

Hourly rate is $30 per hour
