I would suggest a bit of my tofu mayo as a binder. I started using peanut butter to avoid having to mess with a binder.
Other things I put on my sandwich if I don't need to keep it too long before eating: sweet onion slices, sprouts, and or greens.

I love PBJ too, on good dense bread. You're right, it does travel well. In fact I am traveling for work at this moment and rather than eat out I often will pack a PBJ sandwich. But I like it with jelly, although peanut butter banana sandwich is really good too. I also like peanut butter with celery and raisins - also known as Ants on a Log. That is a great snack. Your mom was certainly creative to come up with that recipe. Maybe I'll have to get a hand grinder and try it with carrots. What would you suggest instead of Kraft dressing? I had a friend once who watched me make a PBJ sandwich and was disgusted by the large amount of peanut butter compared to jelly. Winco has machines where you grind your own, which is fun. When I was in high school running track, I had a lunch I brought every day. It was PBJ sandwich, apple and a yogurt. I think I was a little obsessive about my routine which can sometimes happen to athletes!
